Kimchi Soup

This recipe is a quick meal to settle the stomach after a fast.  It contains some fermented food – KimChi which is a spicy fermented korean cabbage.

This was part of a full meal including KimChi, and smoked pulled lamb, and Ham which were both smoked at the same time as the tomatos.

Instructions
  1. Cut a cross in the top of a tomato with a sharp knife
  2. Drop tomato into boiling water for 2 mins until skin starts to peel away
  3. Pull the peel off
  4. Optional step: Hot smoke the tomato for about 30 mins
  5. Blitz tomato, chicken stock, kimchi until there are no chunks of cabbage, then microwave for a minute or until warm enough for service - add cream and blitz again and serve
