Berries all year
  1. Put a sheet of parchment paper on a tray and lay out the berries so they don’t touch
  2. You can mix varieties of berries … just make sure they don’t touch so they don’t freeze into clumps.
  3. Large berries like strawberries you can slice with a mandoline or a sharp knife.
  4. Put the tray in the freezer until frozen. Then transfer to freezer bags.
  5. The berries will store this way in your freezer for months if not years.
  6. When ready to serve, you can make up a ramekin or small bowl with a set number of frozen berries – then microwave them in a for 30-60s
  7. Serve with coconut yogurt, or cream, or marscapone and maybe an espresso.
