Christmas pavlova bites
Cream of Tartar
to taste (I used a smidgen of pure sucralose)
Beat egg whites and Cream of Tartar in a chilled bowl until stiff peaks form
Spoon into silicone mold sprayed with coconut oil.
Bake in a 120C (250F) oven until the edges start to go golden.
Top with some of kim’s lemon curd, maybe a little whipped cream and a few berries for just the right essence of christmas pavlova
