  1. Cut a cross in the top of a tomato with a sharp knife
  2. Drop tomato into boiling water for 2 mins until skin starts to peel away
  3. Pull the peel off
  4. Optional step: Hot smoke the tomato for about 30 mins
  5. Blitz tomato, chicken stock, kimchi until there are no chunks of cabbage, then microwave for a minute or until warm enough for service – add cream and blitz again and serve
