Ingredients

lemon juice
Lemon zest to garnish

swerve confectioners sugar
or your sweetener of choice (more if you like it sweeter)

egg yolks
1/2
cup
unsalted butter
The higher quality, the better
Instructions
Put lemon juice, sweetener and eggs in saucepan.
Stir and begin to heat.
Add butter.
Cook on medium heat stirring constantly until thickens, 5-8 minutes. Do not let it come to a boil.
Strain through mesh sieve into cool owl. Chill.
