Pressure-cooked Beef Short Ribs

  1. Combine all ingredients in pressure cooker
  2. Close lid, close pressure valve and cook on “meat” setting (or high) for 75 minutes
  3. Shut off pressure cooker and carefully (with long tongs) open pressure valve
  4. Open cooker, remove ribs and set aside
  5. Strain liquid into a saucepan, reduce over medium heat for at least 10 minutes
  6. Add 1/2 cup (or more) of heavy cream and reduce until thick.
  7. Salt and pepper sauce to taste. Spoon over ribs and enjoy
