Au Poivre (with pepper) rub makes steaks sing!

This is a very simple base for an Au Poivre rub, which can elevate many cuts of meat when applied liberally before searing.

Instructions
  1. Combine ingredients in a blender or food processor until peppercorns are coarsely chopped. Alternatively you can use a mortar and pestle to grind by hand.
  2. Apply liberally to all sides of any piece of beef or pork, pressing the peppercorns into the meat.
  3. Sear and cook the meat using the Pan-Sear Oven Finish method. See link in the notes.
