Carl’s Keto Hummus Tahini
approx 500 g
about 4 tbsps
broken up into cloves
about 1/2 cup
Preheat oven to 300F (about 150C)
Crush garlic cloves with palm and remove skin. Chop cauliflower and place on cookie sheet with garlic cloves, save one, and olive oil. Sprinkle cumin and paprika on top.
Roast until browning around the edges, about 30 minutes. Remove from oven and allow to cool for at least 10 minutes.
Combine with remaining ingredients including one bulb of fresh garlic in a food processor and combine until smooth and silky.
Serve in a bowl with olive oil and paprika sprinkled on top . Enjoy with chicken, lamb, or just as a side dish to whatever you’re eating for dinner tonight.
