Cook ham (or bacon) in pan to taste, then cook leek in fat from Ham (bacon).
Spray a 9” glass pie plate with oil – I use coconut (you can used butter if you prefer)
Spread ham and leek evenly through pie dish
Whisk egg, cream, cayenne pepper and erythritol (if using) until well combined
Grate cheese and spread over the top of the ham and leek
Pour egg/cream mixture over all the ham cheese and leek evenly
Push cheese and ham under egg mixture using a fork
Sprinkle small amount of paprika over top of quiche
Put in hot oven for 20 minutes
Reduce heat to 180c for about 10 minutes, check with knife or wooden skewer for doneness. Can take another 20 minutes. I like to turn off heat and leave quiche in oven.
If you extract the quiche from the pan while still warm it won’t hold up particularly well
But if you put the quiche in the fridge to set and then cut it and reheat it in the microwave – it’s hold up and have sharp edges
