Pulled beef – 6 ways

At Ketofest this year I showed 6 different ways of cooking pulled beef.

You might have already seen the recipe I made with pulled beef cooked in zero carb beer.  It’s the same cut of meat.  In Australia it’s called a Bolar roast, in the USA you can use chuck roasts.

Both are cut from the fatty shoulder of a cow.  There is a seam of gristle through it and the meat is tough unless you cook it for a long time.  But look at the price.  It’s around AUD $11 per kilo (US$3.8/lb) – we usually have 100g per plate so for us that’s AUD $1.10 per plate plus low carb vegetables – that’s a very cheap meal.

Each meal here made 8 tastes, each of which is roughly 50g (1.7 oz) of meat.  A regular serving is usually 100g (3.6 oz).

Instructions
Basic pulled beef
  1. Add the stock to a slow cooker/crock-pot. It can be in ice cubes if you store your stock like that. It could be just water or sometimes I even use Whey left over from making cheese. The point is to have a liquid to prevent the meat from catching and burning before it has had a chance to render out some of the fat.
  2. Add Bolar Blade. If you want to cook a spiced pulled beef you can smear a spice mix over the top surface of the roast, but for this recipe we'll add the flavorings after the meat has been cooked and pulled.
  3. Add Bay leaves and Thyme. These herbs specifically compliment beef and make the resulting flavor more beef-like.
  4. Cook with the lid on for 6-10 hours, or until the meat to start to fall apart. There will be a lot of cooking liquid that's normal.
  5. With a pair of forks tease the meat apart so the fibers draw up the cooking liquid.
  6. I portion the beef into 200 mg bags for 2 servings per bag, and then freeze.
  7. NOTE: This is unseasoned, so we will have to add salt to each meal to taste.
Hungarian pulled beef
  1. Put pulled beef in the microwave for 1 minute to thaw. Make sure you have cracked the seal of the ziploc bag.
  2. Take a Magic bullet container, add the garlic, paprika and roasted pepper and puree the mixture.
  3. Add the mix to a hot pan and fry for about 1 min to mellow the harshness of the garlic, then add the meat and mix well.
  4. Cook until the meat is warmed through.
  5. Take the pan off the heat, and swirl through the sour cream.
Thai pulled beef
  1. Put pulled beef in the microwave for 1 minute to thaw. Make sure you have cracked the seal of the ziploc bag.
  2. Take a Magic bullet container, and add the Chili-pepper, Kaffir lime leaf, Lemon-grass, ginger, turmeric, clove and Coconut cream then puree.
  3. Add the mix to a hot pan and fry for about 1 min to blend the flavors, then add the meat and mix well.
  4. Cook for about 2 minutes to develop the flavors.
BBQ pulled beef
  1. Put pulled beef in the microwave for 1 minute to thaw. Make sure you have cracked the seal of the ziploc bag.
  2. Take a Magic bullet container, and add the ACV + Tomato paste + Worcestershire sauce + Sweetener and puree.
  3. Add the pureed BBQ sauce to a hot pan with the meat and mix well.
  4. Cook for about 2 minutes to develop the flavors.
Curry pulled beef
  1. Put pulled beef in the microwave for 1 minute to thaw. Make sure you have cracked the seal of the ziploc bag.
  2. Roast the seeds in a dry fry pan until they have started to "crack" - this will mellow and develop their flavor
  3. Add the roasted seeds to the magic bullet blender and puree
  4. Add the pureed curry powder to a hot pan with the ghee and meat and mix well.
  5. Cook for about 2 minutes to blend the meat and curry flavors.
  6. Take the pan off the heat, and swirl through the sour cream.
Philly Cheese pulled beef
  1. Put pulled beef in the microwave for 1 minute to thaw. Make sure you have cracked the seal of the ziploc bag.
  2. Slice the onion into rings, and fry in a little butter until translucent
  3. add the meat and Worcestershire and cook until the meat is warmed.
  4. Take a Magic bullet container, and fill it 3/4 with grated cheese.
  5. Add boiling water and Sodium Citrate and blend.
  6. If the mix is not liquid enough, add a tsp of water and re-blend.
  7. If the mix is too liquid, add a little grated cheese and re-blend.
  8. Serve in a lettuce leaf cup with cheese sauce.
Taco seasoned pulled beef
  1. Put pulled beef in the microwave for 1 minute to thaw. Make sure you have cracked the seal of the ziploc bag.
  2. Roast the seeds in a dry fry pan until they have started to "crack" - this will mellow and develop their flavor
  3. Add the roasted seeds to the magic bullet blender with the chili-powder and blend to make taco spice mix
  4. Add the meat to a hot pan with the water and the taco spice mix and mix well.
  5. Cook for about 2 minutes to blend the meat and spice flavors.
  6. Take the pan off the heat, and swirl through the sour cream.
  7. Serve in a lettuce cup with grated cheese and guacamole

    So our go to Keto meal most days is what we call a 3 stack … which is the Beef fried up with BBQ flavors (a little tomato paste, Worcestershire sauce and some apple cider vinegar), some fennel salad [ http://easylocarb.com/recipe/fennel-bulb-salad/ ] , and some fried haloumi.

    This meal is literally 5 minutes away if I have a bowl of fennel bulb salad in the fridge :slight_smile:

  2. Hi, thank for this awesome idea. I love beef stews and this makes it so much easier and convenient.

    Today I made ‘goulash’, which is similar to your hungarian beef. May I suggest that next time you make it, add some caraway seeds.

    Next week I’ll make ‘haché’, a traditional Dutch beef stew :ok_hand:t3:
