Berries all year

When we were both in Connecticut in summer for Ketofest, Carl and I went Blueberry picking at his moms place.

And in a few months time in Australia it will be Blackberry picking time and we will be picking them during our bike rides around the lake.

So obviously there will be a glut of berries, but unlike bears we don’t want to gorge on those berries and then hibernate for winter.   So what we do is we freeze them so they last longer, but also when frozen they can’t be snacked upon, and we can make a dessert from a precise amount of them – so it gives us a little more portion control.

Instructions
  1. Put a sheet of parchment paper on a tray and lay out the berries so they don't touch
  2. You can mix varieties of berries ... just make sure they don't touch so they don't freeze into clumps.
  3. Large berries like strawberries you can slice with a mandoline or a sharp knife.
  4. Put the tray in the freezer until frozen. Then transfer to freezer bags.
  5. The berries will store this way in your freezer for months if not years.
  6. When ready to serve, you can make up a ramekin or small bowl with a set number of frozen berries - then microwave them in a for 30-60s
  7. Serve with coconut yogurt, or cream, or marscapone and maybe an espresso.
