Christmas pavlova bites
Pavlovas for Christmas are an Aussie tradition, remember it’s middle of summer here so fresh fruit and cold foods are ideal.

Ingredients
- 4 egg whites
- 1 tsp Cream of Tartar
- Sweetener to taste (I used a smidgen of pure sucralose)

Instructions
- Beat egg whites and Cream of Tartar in a chilled bowl until stiff peaks form
- Spoon into silicone mold sprayed with coconut oil.
- Bake in a 120C (250F) oven until the edges start to go golden.
- Top with some of kim's lemon curd, maybe a little whipped cream and a few berries for just the right essence of christmas pavlova

Haha - exactly!
It may have been stolen but I reckon it was perfected by Aussies. When I was in NZ a couple of years ago I had Pav and was very disappointed by it. The ones in Australia are way better.
