Asiago (or other) Cheese Crisps

This is the easiest recipe. In just 20 minutes you can satisfy your cravings for salty AND crunchy (potato chips, etc.) at the same time with NO CARBS! All you need is shredded cheese. Use a hard cheese like Asiago, Parmasagn, or even aged Cheddar. Avoid processed pre-shredded cheese as these sometimes contain potato (or other) starch so the shreds don’t stick together. I can get pre-shredded Asiago at my local grocery store in the cheese section, and it contains no starch. You’ll also need parchment paper and a cookie sheet.

I like to use these as a delivery mechanism for mushroom brie, pate’, guacamole, or any other fatty spreadable food.

  1. Preheat oven to 300 F
  2. Place parchment on cookie sheet, covering it
  3. Grab a pinch of cheese (about a tablespoon) and plop it down in the corner. It will spread, but try to even it out a bit, otherwise it won't be cripsy in the middle
  4. Repeat, making 12 distinct piles on the cookie sheet
  5. Optionally sprinkle garlic powder and/or seasoning on each pile
  6. Bake for 18-20 minutes or until the entire crisp has turned brown and crispy
  7. Remove and place on a plate or rack to cool
