Deep fried Brussel sprouts
Deep fried Brussel sprouts may be the simplest side dish to go with my protein, it’s certainly the easiest – and they go with everything.
Pulled BBQ Beef

Bacon wrapped Fish

72 hour rib-eye roast cooked in a sous vide with Jus.

Get yourself a small deep fryer (like this one I got from Aldi)

The Fat I use with this is grass fed dripping, but there is nothing wrong with asking your butcher for trimmings and render your own Lard or Suet.

    Instructions
    
                - Turn on your deep fryer, I leave the oil to go solid in it between uses.

 - Cut off the dry hard stalk end.

 - Cut a cross so the frying oil can get into the sprout.

 - Fry for about 3 mins or until the leaves just start to go golden.

 - Salt them liberally, you can even put a dollop of Mayo on them if you want to add a little more fat to your meal.

 
I didn’t have Brussel Sprouts so I did oven-baked thighs topped with bacon and deep-fried asparagus. Wowza…
