- 1.2 lbs meatball mix (beef, veal, and pork)
- 2.5 oz crushed pork rinds
- 5 cloves garlic crushed
- 1 egg (large)
- 3 tbsp olive oil extra virgin
- 1 tsp kosher salt
- 1 tsp crushed black pepper
Sauce
- 1/4 cup olive oil extra virgin
- 1 Onion small, finely chopped
- 2 tbsp dried Ancho chiles finely chopped
- 1 tbsp cumin
- 1 cup tomato sauce Rao's marinara recommended
- 2 sprigs fresh tarragon leaves finely chopped
- 1/4 cup dry red wine Rioja
