Meringue pucks
This recipe came about in response to Kim’s recipe for Lemon Curd which left me with 4 egg whites.
So I made up a quick batch of sweetened meringue to use as a base for a dollop of that tart lemon curd.
Pretty decent little keto desserts, each is about 1/6th of an egg, 40ml of lemon juice, and 20ml of Butter.

Ingredients
- 4 egg whites
- 1 tsp Cream of Tartar
- Sweetener to Taste (I use 1 smidgeon of pure sucralose)
- Coconut Oil Spray

Instructions
- Beat egg whites and Cream of Tartar in a chilled bowl until stiff peaks form
- Spoon into silicone mold sprayed with coconut oil.
- Bake in a 120C (250F) oven until the edges start to go golden.
