Carl’s Keto Hummus Tahini
I like to frequent Michael Jordan’s Steak House at the Mohegan Sun Casino near where I live. Don’t get me wrong. I love the rib eye and the NY strip… but the lamb… OMG! The twin double-cut lamb chops at Michael Jordan’s are amazing! One of the highlights of the dish is the schmear of hummus under the chops. Now, I love me some hummus, but did you know that 1/2 cup of chick peas has like 21 grams of NET CARBS?? That’s way too much for my blood.
I have made hummus before. It’s basically a paste of chick peas (Garbanzo beans), Tahini (sesame paste), garlic, parsley, olive oil, lemon juice, and spices (cumin and paprika being primary). I don’t know if you know this, but chick peas have ZERO flavor. If I could substitute them with a roasted cauliflower (and roasted garlic) I could get the same consistency of chick peas with the FLAVOR of cauliflower and garlic. That would be awesome!
So the next time you are looking for a side dish, and your mind goes to cauli-mash, consider elevating it by serving this amazing hummus.

Looks amazing!! I love hummus, and love experimenting with different variations. I have a great zucchini hummus recipe that I will have to post!! Thanks for sharing!!
I wonder if it the green of EVOO?
Oh Sorry. did not see that
Coriander would be nice on top if that is what it is.
I’ll bet you’re right that’s probably what it is
Flat leaf parsley. I forgot to put that in the recipe. I’ve updated it now.
