Lemon Curd
What do you do when Life gives you a giant Lemon tree?

I’m pretty sure that that qualifies as a fat bomb.

Ingredients
- 1/2 cup lemon juice Lemon zest to garnish
- 1/2 cup swerve confectioners sugar or your sweetener of choice (more if you like it sweeter)
- 4 egg yolks
- 1/2 cup unsalted butter The higher quality, the better

Instructions
- Put lemon juice, sweetener and eggs in saucepan.
- Stir and begin to heat.
- Add butter.
- Cook on medium heat stirring constantly until thickens, 5-8 minutes. Do not let it come to a boil.
- Strain through mesh sieve into cool owl. Chill.
This is so yummy and so easy to make. I’m very lazy, so I strained the lemon juice in a strainer when first adding it to the pan so I wouldn’t have to put the finished curd through a mesh sieve. It worked! Thank you for the recipe.
Another yummy thing to try: I was wanting something chocolatey, so I subbed in 2T cocoa powder for the lemon juice. It hardens up more than the lemon curd, but still pretty tasty.
Maybe I’m missing them, but is it possible to get the carb counts for these recipes? I’m only a couple of weeks in and it would be helpful. Thanks!

Great recipe.
I’m tracking my micros and am unable to locate the nutritional information for this recipe. I made it yesterday and ate most of it in one day. It was the first sweet thing i had put in my mouth for 8 days. I blew my carb intake and lost my ketosis for the day. I was able to locate information on the web that indicated if you use swerve there are no carbs from the sugar substitute. But I’d like to confirm this with someone familiar with this recipe. Nancy, here are the macros, with swerve as the sweetner, using a tablespoon as the serving size. 107 calories, 1g carb, 11 g fat, 1g protein. Germaine
ok I need clarification please. are you saying per serving of CURD, the one of 4 servings you get from the recipe, that that = 107 calories and one carb etc? or are you saying one tablespoon of the serving is 107 calories etc… I sure hope one tablespoon of this curd isn’t 107 calories…. thanks!
