Au Poivre Steak Rub
This is a very simple base for an Au Poivre rub, which can elevate many cuts of meat when applied liberally before searing.

Ingredients
- 1/2 cup whole peppercorns
- 1/4 cup Coarse Salt
- 1/4 cup cumin seed
- 1/4 cup onion powder
- 1/4 cup garlic powder

Instructions
- Combine ingredients in a blender or food processor until peppercorns are coarsely chopped. Alternatively you can use a mortar and pestle to grind by hand.
- Apply liberally to all sides of any piece of beef or pork, pressing the peppercorns into the meat.
- Sear and cook the meat using the Pan-Sear Oven Finish method. See link in the notes.
