Normally Coleslaw is made from raw Cabbage, Carrots, and Mayonnaise.  And if you get Coleslaw from a certain intentional chain of Fried chicken (putatively from a state that specializes in Bourbon and Bluegrass and a Derby) that will not be named … it will include sugar and white vinegar.

We wanted to remake this keto – but we also wanted a fresh salad that we could keep in the fridge and make into a meal very quickly.  So we replaced carrots with Bell Peppers (or Capsicum), ditched the sugar and vinegar (although we could have kept the vinegar) .

So we just keep a bowl of the prepared Cabbage and Peppers in the fridge and a bowl of homemade Mayo  – when we need to make a meal up we just combine as we put together a plate of food.

Note we have orange peppers and red cabbage – but you can use green or yellow peppers, and white or red cabbage, or even chinese Wombuk.

Instructions
  1. Slice up cabbage well
  2. Cut capsicum (bell peppers) into plates and then cut those into thin batons ( or a Julienne )
  3. You can keep this combo in a bowl in the fridge for at least a week
  4. Dress with Mayonnaise just before eating
