Keto Coleslaw
Normally Coleslaw is made from raw Cabbage, Carrots, and Mayonnaise. And if you get Coleslaw from a certain intentional chain of Fried chicken (putatively from a state that specializes in Bourbon and Bluegrass and a Derby) that will not be named … it will include sugar and white vinegar.
We wanted to remake this keto – but we also wanted a fresh salad that we could keep in the fridge and make into a meal very quickly. So we replaced carrots with Bell Peppers (or Capsicum), ditched the sugar and vinegar (although we could have kept the vinegar) .
So we just keep a bowl of the prepared Cabbage and Peppers in the fridge and a bowl of homemade Mayo – when we need to make a meal up we just combine as we put together a plate of food.
Note we have orange peppers and red cabbage – but you can use green or yellow peppers, and white or red cabbage, or even chinese Wombuk.
Ingredients

- Slice up cabbage well
- Cut capsicum (bell peppers) into plates and then cut those into thin batons ( or a Julienne )
- You can keep this combo in a bowl in the fridge for at least a week
- Dress with Mayonnaise just before eating
My wife make coleslaw… she just substitutes erythritol for the sugar.
