Kimchi Soup
This recipe is a quick meal to settle the stomach after a fast. It contains some fermented food – KimChi which is a spicy fermented korean cabbage.
This was part of a full meal including KimChi, and smoked pulled lamb, and Ham which were both smoked at the same time as the tomatos.

Ingredients
- 1 tomato
- 1/4 cup chicken stock
- 1/4 cup Kimchi especially the juice
- 30 ml heavy whipping cream

Instructions
- Cut a cross in the top of a tomato with a sharp knife
- Drop tomato into boiling water for 2 mins until skin starts to peel away
- Pull the peel off
- Optional step: Hot smoke the tomato for about 30 mins
- Blitz tomato, chicken stock, kimchi until there are no chunks of cabbage, then microwave for a minute or until warm enough for service - add cream and blitz again and serve
