Miso Apple glazed ham
Often we’ll buy pre-sliced ham because of convenience, but the flavour is bland.
Sometimes however I crave ham with a more sophisticated flavour and for those times we make Julie’s Miso Apple glazed ham.

Ingredients
Ham
- 1 Leg ham with bone-in Save that bone and we'll make a hambone stock later
Miso Apple Glaze
- 2 tbs white miso
- 1.5 tbs apple cider vinegar
- 7 drops apple flavoring essence https://bakingpleasures.com.au/p468/lorann-oils-apple-flavouring

Instructions
- Take the skin off the ham in one piece, sliding a knife beneath the skin into the fat layer and removing as little of the fat as possible.
- Mix the miso paste, some Apple cider vinegar, and the apple flavour essence. And smear the paste liberally over the ham
- put skin back on to stop top burning (I sometimes spear the skin to the ham using a metal corn cob holder)
- Cook for about an hour low temp. I often throw a ham into an empty shelf when I smoke meat in a hot smoker.
