Ramekin muffin
This was a recipe that showed up once on our FB group and has become a favourite.
The recipe originally came from Nutrition for Life but I modified it slightly to make it more dense so it would be a good base for an Eggs Benedict.
The photo was one of Matts … unfortunately I ate the ones I just made too quickly to get a good standalone snapshot.
But you can see mine forming the base of this eggs benedict.

Ingredients
- 1 whole egg
- 1 egg white
- 1 tbsp Coconut Flour
- 1 tbsp Almond meal
- 1/2 tsp Baking Powder

Instructions
- Mix everything in a bowl (or I just use a magic bullet)
- Add mixture to a ramekin, you can grease it with coconut oil spray but it doesn't appear to need that to come away from the ramekin.
- MIcrowave for 90secs
- Use a knife to remove the "muffin" and put it on the top of the upturned Ramekin to dry and cool down a little.
