Instructions
  1. Put lemon juice, sweetener and eggs in saucepan.
  2. Stir and begin to heat.

  3. Add butter.
  4. Cook on medium heat stirring constantly until thickens, 5-8 minutes. Do not let it come to a boil.
  5. Strain through mesh sieve into cool owl. Chill.

  • This is so yummy and so easy to make. I’m very lazy, so I strained the lemon juice in a strainer when first adding it to the pan so I wouldn’t have to put the finished curd through a mesh sieve. It worked! Thank you for the recipe.

  • Another yummy thing to try: I was wanting something chocolatey, so I subbed in 2T cocoa powder for the lemon juice. It hardens up more than the lemon curd, but still pretty tasty.

  • Maybe I’m missing them, but is it possible to get the carb counts for these recipes? I’m only a couple of weeks in and it would be helpful. Thanks!
