Miso Apple glazed ham

Often we’ll buy pre-sliced ham because of convenience, but the flavour is bland.

Sometimes however I crave ham with a more sophisticated flavour and for those times we make Julie’s Miso Apple glazed ham.

Instructions
  1. Take the skin off the ham in one piece, sliding a knife beneath the skin into the fat layer and removing as little of the fat as possible.
  2. Mix the miso paste, some Apple cider vinegar, and the apple flavour essence. And smear the paste liberally over the ham
  3. put skin back on to stop top burning (I sometimes spear the skin to the ham using a metal corn cob holder)
  4. Cook for about an hour low temp. I often throw a ham into an empty shelf when I smoke meat in a hot smoker.
