Crustless Quiche

Quiche is a great way to eat Ham and Eggs, but usually the crust contains carbs … but you can make a quiche without any crust as long as you set it in the fridge after cooking it and before slicing it.

  1. Preheat oven to 200c
  2. Cook ham (or bacon) in pan to taste, then cook leek in fat from Ham (bacon).
  3. Spray a 9” glass pie plate with oil – I use coconut (you can used butter if you prefer)
  4. Spread ham and leek evenly through pie dish
  5. Whisk egg, cream, cayenne pepper and erythritol (if using) until well combined
  6. Grate cheese and spread over the top of the ham and leek
  7. Pour egg/cream mixture over all the ham cheese and leek evenly
  8. Push cheese and ham under egg mixture using a fork
  9. Sprinkle small amount of paprika over top of quiche
  10. Put in hot oven for 20 minutes
  11. Reduce heat to 180c for about 10 minutes, check with knife or wooden skewer for doneness. Can take another 20 minutes. I like to turn off heat and leave quiche in oven.
  12. If you extract the quiche from the pan while still warm it won't hold up particularly well
  13. But if you put the quiche in the fridge to set and then cut it and reheat it in the microwave - it's hold up and have sharp edges

  2. I’ve made this twice and loved it both times. Today I changed it up just a bit, swapping out the ham for chorizo crumbled and fried, and Colby Jack cheese for the tasty cheese. It’s a nice twist on the crustless quiche if you tend towards spicier fare! If you haven’t had this recipe, give it a whirl. I cut it in eight pieces and freeze them wrapped in parchment paper and ziplocked for freshness, and they reheat very nicely.
